1. Make a persimmon purée by blending two persimmons with 15-30ml simple syrup (to taste) in a blender.

2. In a cocktail shaker filled with ice, combine 45ml persimmon purée, with 50ml gin and 30ml lime juice.

3. Strain into a glass and garnish
