KI NO BI SEI Kyoto Dry Gin (54.5%) is a bold, Navy Strength expression from The Kyoto Distillery, inspired by tradition and crafted with precision in Kyoto. Meaning "The Beauty of the Seasons," KI NO BI is made from 11 carefully selected botanicals, distilled separately across six elements - Base, Citrus, Tea, Herbal, Spice, and Fruity & Floral - to achieve exceptional balance. In the SEI expression, this meticulous process is intensified, with the final blend recalibrated to elevate each botanical to its fullest, delivering a rich, powerful gin with remarkable depth and clarity.

KI NO TEA was created in collaboration with tea-grower and blender, Hori-Shichimeien, founded in the Meiji era in 1879. Based in the famous Uji region to the south of Kyoto city, a number if super-premium Uji teas have been specially selected to form the heart of KI NO TEA. The Macallan Double Cask 12 Years Old is crafted from the harmonious combination of sherry seasoned American and European oak casks from Jerez de la Frontera, Spain. This expression opens with inviting aromas of fudge, candied citrus, vanilla, and soft spice. The palate reveals layers of milk chocolate raisins and creamy toffee, complemented by orange peel and gentle spice, leading to a medium finish with lingering sweet oak. Multi award-winning The Source Gin is shaped by the four seasons that sweep through New Zealand's Cardrona Valley in the Southern Alps. Locally foraged rosehip forms a natural matrix alongside classic juniper, coriander seed, angelica root, and fresh lemon and orange zest, all vapour-distilled into a Cardrona's Single Malt Spirit. Non-chill filtered to preserve full flavour and character, the spirit may gently cloud when cold or diluted - an unmistakable mark of distinction that reflects the purity, depth, and craftsmanship of this very special drop.

Two types of cask are used for the maturation of this blended whisky: European oak which formerly held New Zealand red wine, and American white oak used exclusively for whisky. Sea air, caramelised fruits, red berries, apricot, spice.
